The vineyards are trellised to vertical shoot position to ensure the bunches always have good light. Irrigation is regulated for good vegetative growth followed by good ripening and fruit concentration (RDI). Different clones have been planted for greater complexity. Each clone is harvested separately at the time of its optimal ripeness.
20% of the grapes were cold macerated for 18 hours at temperatures under 5ºC. The rest were crushed and immediately pressed. Free-run and low pressures were used to produce the Reserve level, in order to ensure high fruit concentration and a good acidity balance. Fined musts fermented at low temperatures (13-14 °C) allow good fruit development and retention. Work on its lees is done before its fining.
Ideal as an aperitif or with marinated raw fish, shrimp cocktail, chicken and caviar.

The valley has a Mediterranean climate, with daytime and nighttime temperatures fluctuating around 20ºC, and a strong influence of the nearby ocean. The average annual temperature is 13.4ºC (56ºF), and average annual precipitations are 450 mm.
Soil and surface
The soil is alluvial, with a fine and sandy texture. It has low capacity for retaining moisture, leading to low yield and high concentration of varietal characteristics. The vineyards are planted at an average altitude of 500 meters above sea level, where the atmosphere is clear and bright.
